The reopening follows Roy and Donice Applequist’s announcement on April 17, 2019, that they were gifting Lindsborg’s legendary downtown restaurant to Bethany College. The restaurant, originally opened in 1966, will continue to provide dishes with a Swedish flair as well as Midwest favorites.  Donice Applequist shared, “for many Kansans, Lindsborg is a favorite small town,” and believes patrons will appreciate knowing that they can enjoy great food and support the college at the same time.

A grand opening is anticipated to occur toward the end of August, after students return to campus.
